Arrival at the Sake Brewery in Saitama. Introduction of the schedule of the day followed by an introduction about this century brewery and its history. Boots and equipment will be provided for your time within the brewery premises.
Start your day discovering the process of Shikomi – fermentation in Japanese – where steamed rice is brought to the Koji Muro, a dedicated room for fermentation. Here, you will learn how the rice is meticulously preserved at a precise temperature to insure a good sake. Then, start the Tanetsuke by mixing the koji mold followed by various ingredients in large sake barrels where it rests for few months to develop a perfect taste.
End your visit of the brewery with a discussion with the Brewer in Chief and a tasting session of the different varieties produced in this unique brewery before heading back to your hotel by private car.
