Meet-and-greet with your guide in the hotel lobby. Departure to the sake brewery by private car.
Arrival at the Sake Brewery. Introduction of the brewery and its history before checking the day's work tasks. Boots and equipment will be provided for your time within the brewery premises.
Discover the process of Shikomi – fermentation in Japanese – where steamed rice is brought to the Koji Muro, a dedicated room for fermentation. There, you will learn how the rice is meticulously preserved at a set temperature to insure the sake flavors. Then, start the Tanetsuke process by mixing the koji mold with various ingredients in large sake barrels where it will be stored for a few months to develop a perfect taste.
